may experience certain diseases more frequently than the rest of the population. Examples of occupational diseases are silicosis in miners, which occurs as a result of prolonged contact with dust when working in mines or hearing loss caused by increased background noise in people working with equipment without protective equipment.
In pig value chains, people working at each node may also be at risk of occupational disease due to working with pigs. A pig farmer, veterinarian or live animal carrier can be bitten by an animal, but in addition to being a physical threat, pigs can carry diseases that are potentially contagious to humans and can be transmitted through close contact or handling of infected animals (Fig. 1 ). How close this contact is when kept on the farm or during transport depends, in large part, on the type of production, for example, farmers on production farms with hundreds or thousands of animals usually do not have close contact with animals, and even if they do , they usually use protective equipment. In underdeveloped countries, where pigs are raised mainly on small farms and extensive technologies, often having contact with the environment, infection with diseases that have arisen in pigs is much more common, and the spectrum of these diseases is very wide and includes intestinal worms, brucellosis or infection with zoonotic swine flu viruses (Table 1).

However, most occupational infections occur at slaughter, where people handle potentially infected meat or bodily fluids, and here we describe two of the main such infections.
Pig erysipelas is caused by the bacterium Erysipelothrix rhusiopathiae, which is carried by many mammals, fish and birds around the world, but pigs are its most important reservoir. Still, it is able to remain viable in the soil for up to a month. Pigs can become infected by swallowing it along with contaminated soil or water, and people can become infected if the bacterium penetrates the skin through small scratches or wounds. This can most easily occur during slaughter and subsequent butchering, when butchers are handling sharp objects (i. e. knives and hooks) and contaminated meat, nasal secretions, urine or excrement without using protective equipment (i.e. e., mail gloves). In pigs, the disease can cause various pathologies, of which diamond-shaped focal skin lesions are the most characteristic for the acute stage of the disease. It is because of this that the disease is often referred to as diamond skin disease (Fig. 2).

In humans, the infection may last a week or two. However, it can lead to a painful infection of the skin (erysipeloid or erythrema creeper), often on the hands, which can be dealt with fairly easily by a course of antibiotics. If left unchecked, the disease can cause fever, joint pain, septicemia and, in the worst case, if the infection enters the heart, death. In Central Europe, swine erysipelas is no longer a common problem, as vaccination of sows and replacements against pathogenic strains is widely used on most farms, the use of protective equipment at slaughter is mandatory, and the general level of health of the population is high and therefore it is not so susceptible to infection. Erysipelas, as an occupational disease for slaughter personnel handling raw pig meat, appears to be on the rise in low- and middle-income countries (Musewa et al. underimmunized. The bacterium is easily killed by proper heat treatment (boiling), but care must be taken by those who work with raw meat, including those who cook it.
In healthy pigs, the bacterium is usually found in the nose or mouth, digestive and urogenital tracts. However, some strains (particularly serotype 2) make pigs seriously ill. Anyone working with live pigs (farmers, veterinarians, transporters, slaughterhouse workers) or raw meat (slaughterhouse workers, meat inspectors, pig transporters and cooks) can be exposed to the bacteria. It penetrates the skin through almost invisible punctures or scratches and can then replicate in the blood (Hughes et al., 2009). In humans, this can lead to septicemia and infection of the brain and, if left untreated, can cause deafness. Different geographic regions are inhabited by different strains, and those circulating in Asia seem to be more disease-causing to humans than those in Western countries. However, deaths also occur in industrialized countries. Vaccines do not exist for either pigs or humans, however, if pigs and/or humans are diagnosed with the disease, antibiotic treatment may be given.
There are many diseases that can occur in humans as a result of the consumption of pork. These illnesses are called foodborne infections (caused by the consumption of pork) because they only occur if the infection is ingested through food. These include Campylobacter, Listeria, Salmonella, Yersinia or toxogenic Escherichia coli, some Staphylococcus aureus, and Mycobacterium avium intracellular (intracellular) complex (MAIC). In some situations, at home, consumers are chefs and should adhere to the same rules as professional chefs in restaurants: never use the same tools to cut raw and cooked foods, protect skin from cuts and scratches, do not touch mouth and wash hands thoroughly with soap and hot water after each use.

A pigsty in a museum context
This unusual museum has a 25-year history. Its creator and inspirer, Erika Wilhelmer, is a passionate collector of everything and a well-known restaurateur in the city: "I have been in the restaurant business all my life.
